DIY Bruschetta
Ok, so this isn’t a recipe as such……..it is merely an idea, a suggestion if you will, for a super easy, delicious, ‘please everyone’ kind of a meal. Perfect for lunch outside on a sunny day whilst sipping on a glass of rosè. This is my DIY Bruschetta…….but make it into whatever you like! You could add things like olives, anchovies, roasted capsicum….whatever! Just make it delicious (my favourite topping is zucchini, mint, labneh and prosciutto).
DIY Bruschetta
serves as many as you like | prep + cook time = 20 mins
Ingredients
Cherry tomatoes cut in half, a decent glug of quality olive oil, salt, a pinch or two of sugar and plenty of fresh basil.
Sliced meats such as salami, prosciutto or jamon
Sheeps milk labneh
Ribbons of zucchini (raw) drizzled with quality olive oil, a pinch of salt, lemon juice and fresh mint
Fresh rocket dressed simply with olive oil & red wine vinegar
Grilled sourdough drizzled with olive oil and rubbed with garlic (go easy on the garlic……raw garlic is pretty potent stuff!)
