Oaty Choc Chip & Coconut Biscuits
Having young school age kids, I have become the master at whipping up last minute lunchbox snacks and these biscuits are one of my (and their!) favourites.
These take so little time to make and are a huge hit. Oh, and they make around 40 biscuits so that should keep you going for a while…..

Oaty Choc Chip & Coconut Biscuits
makes 40
Ingredients
250g unsalted butter, softened
120g soft brown sugar
40g caster sugar
200g wholemeal self raising flour
200g rolled oats
70g shredded coconut
150g dark chocolate chips
salt flakes
Method
Preheat the oven to 170C and line 4 large baking trays with baking paper (or do them in 2 batches if you only have 2 trays).
Place the butter and sugars in a food processor and process until light and fluffy. Add the flour, oats and coconut and pulse to mix, then add the chocolate chips and pulse briefly just to combine.
Roll tablespoonfuls of the dough into balls and place on the baking trays, leaving room between for the biscuits to spread out. Flatten slightly with the back of a spoon and sprinkle lightly with salt flakes.
Bake for 15-20 minutes or until golden brown. Remove from the oven and allow to cool for 10 minutes before transferring to a wire rack to cool completely. Store in an airtight container for up to 2 weeks.
